Flapjack Recipe – Flapjacks are a great breakfast food. This breakfast originates in England and is different than the pancake that Americans think of. This flapjack is similar to a cookie bar. It is not a biscuit or a cookie but is filled with sweetness.
- 6 ounces and 1 tsp of unsalted butter
- 6 tbsp. light corn syrup
- 4 cups of rolled oats,(do not use quick oats)
- Preheat the oven to 350 degrees.
- Grease a baking dish using a teaspoon of butter.
- If a person is using a smaller pan they will get flapjacks that are chewy and thick. If they use a larger pan the flapjacks will become crispy and thin.
- Put the corn syrup and the remaining butter in a saucepan. Melt the butter over low heat.
- Put the oats into a bowl. Add a pinch of salt. Put the butter mixture over the oats. Stir well so that the oats are coated.
- Once the oats are evenly coated they should be put into the greased baking pan.
- The flapjacks should be baked for 25 minutes or until they are golden brown. They will still be soft right out of the oven. The flapjacks will firm up as they cool.
- The flapjacks can be cut into squares. They are often served when they have cooled down.
There are many variations to the flapjack. There can be additional ingredients added. Dried fruit and coconut go well when mixed in the flapjacks. Chocolate can be melted and drizzled on the top. A person can also add nuts and chocolate chips if they wanted to. The flapjacks can be stored in a tin with a lid for up to a week. If a person is going to freeze the flapjacks they should be wrapped up and put into an airtight freezer bag. They can be frozen for up to 2 months.
