Ingredients

  • 1-Cup Self-Rising Flour
  • 1 Tablespoon Granulated Sugar
  • 1 Large White Egg
  • 1 Tablespoon Butter (Melted)
  • 1/2-Cup Almond or Whole Milk

SUPPLIES:

* Cooking Griddle/Medium Frying Pan
* 1 Small & 1 Medium Mixing Bowl
* Flour Sifter
* Metal Whisk
* Spatula





Instructions

STEP 1 - In a medium size mixing bowl, sift flour while stirring in the sugar.

STEP 2 - Round out the center of dry ingredients into a bowl shape.

STEP 3 - Crack & add large egg into mixture.

STEP 4 - Add in milk, stirring until it turns into a smooth, creamy batter. (You can add 1/4 cups more milk for a thinner pikelet)

STEP 5 - Continue stirring pikelet batter while adding the melted butter.

STEP 6 - Set a cooking griddle to medium setting, and coat with a light amount of non-stick butter cooking spray.

STEP 7 - Using a large mixing spoon, drop large scoops of pikelet batter onto the heated griddle.

STEP 8 - Flip pikelets when they start bubbling up.

STEP 9 - When golden brown in color, place on plate.

STEP 10 - Serve with warm honey, fresh fruit, marmalade, or butter.

Notes

For added flavor, drop in a few dashes of vanilla extract after adding the butter in step 5. Fresh berries and/or chocolate chips will also help liven up the taste of pikelets as well. Depending on the batch size of batter, a 1/4 cup is an adequate amount in which to add.
